What is Wagashi in bloom?

Wagashi in bloom is an relatively new concept of creating flowers with sweet bean paste using a piped flower technique, decorating all sort of Japanese sweet such as Mochi, Dorayaki, Matcha cake, rice flour cake and Japanese style jellies with these delicious & beautiful flowers.  

They may look difficult to make, and you would need to practice, but once you get used to the basic technique, you will quickly learn to create all sorts of flowers of your choice. It's your choice which flowers you make and the sweets to decorate with those flowers...  the possibilities are endless!

Course Summary

At the beginning of this course, we need to learn how to make shiro-an (white bean paste), which is essential ingredients for making bean paste piped flowers.
Through these 5 sessions, you will learn most of the main techniques to create beautiful piped flowers as well as some traditional Japanese sweets to decorate piped flowers with.

All the piping tools and ingredients you will need for the course can be purchased in UK
and I will give you information where to buy them in advance.

By the end of the course, you will be able to create many beautiful flowers with healthy bean paste and new styles of Japanese sweets.

☆These courses can be held either English or Japanese.

Class 1 (Basic preparations /Making Shiroan and filing )  2 hours
~The new course will start in spring 2022~

You will learn how to make shiro-an (white sweet bean paste) from scratch which is essential knowledge to start making piped flowers and other Japanese sweets. Also you will learn how to make filling bean paste for making Daifuku mochi for Class 2

​☆Making shiro-an is time consuming so you will need to have the first half prepared before class 1 (clear instructions will be provided before the course)

☆Participants who already know how to make shiro-an can skip the class 1 and start from class 2.

Class 2( Daifuku-mochi making / 5 petal flower & leaf piping)  2 :30 hours
~The new course will start in spring 2022~

You will learn how to make mini daifuku mochi and decorate them
with beautiful piped flowers and leaves.

leaf to decorate mini daifuku mochi.

Class 3 (Yuzu flavoured Mizu Yokan making / Chrysanthemum & Hydrangea                                                                                              flower  &leaf piping  )   2 :30hours
~The new course will start in spring 2022~

You will learn how to make mizu yokan which is like a jelly with sweet bean paste in using a agar-agar as a gelling agent.`

Class 4 ( Dorayaki making / Carnation, Daisy flower & leaf piping )  2 :30hours
~The new course will start in spring 2022~

You will learn how to make dorayaki which is quite similar to
pancake.

☆Flower piping / you will learn how to pipe carnation, daisy and
   leaves.

Class 5( Matcha cupcake making / Rose, Annabelle & leaf piping )  2 :30 hours
~The new course will start in spring 2022~

You will learn how to make matcha flavoured cupcake with rice flour.
